Home Made Tomato Soup

6 cups tomatoes,  pureed in the blender (approximately 8 small tomatoes) – (I used the many I got from my CSA box)
1 onion, chopped
4 garlic cloves, minced
1/4 cup veggie broth
1 tsp sea salt or garlic salt
1 Tbsp  fresh basil
dash of pepper

 cut up 6 cups tomatoes,  puree in the blender
place in a pot with lid, medium heat cook for an 30 mins
Saute onion in pan
after the 30 mins add 1/2 the onion, 1/2 garlic
after another 30 mins add 1/2 the onion, 1/2 garlic
at the end taste to make sure the tomato is cooked, (not too metallic/ acidic flavor)
serve soup in bowls
chop up basil and add to the soup bowls

Asian Cucumber Salad

Asian Cucumber Salad Recipe
Ingredients:
1 cucumber, cut in half and thinly sliced
1 carrot, peeled to create peel pieces and then chopped up
1/8 cup of thinly sliced red onion
1/4 cup of rice vinegar
1/3 cup of sugar
1 tsp. of thai chili garlic sauce


Preparation
Salt the cucumber that is sliced a good amount. Let them sit in colander to leach out the water from them. Once the hour is up rinse them off in the colander and towel dry them. Yes ring them out a bit. The point is to remove the extra water. Place the cucumbers in a larger bowl.

In a small bowl mix the rest of the ingredients.  Once you have dissolved the sugar in the sauce you can pour the sauce over the cucumbers. Mix the sauce with cucumbers. Best to let it set for 30 mins, but you can eat it right away.
